You know when you set out to do all these healthy substitutions in a recipe, and it just doesn't turn out to your satisfaction? This was NOT one of those times. I am SO HAPPY to share with you how some substituting and using what I had on hand actually turned into the BEST most delicious chocolate cookies!

This soup is savory and delicious. It's a great recipe to help heal the digestive system. It's convenient to make in a large batch and keep in the refrigerator. Try your best to use fresh ginger root as that ensures the best taste and nutritious effects.

Weekend in the woods
For spring break, we got to travel with Molly's parents to North Carolina and stay at a cabin in the woods for the weekend. It was a great stress-free trip. We were lucky to have generous friends who weren't using their cabin and allowed us to use it as our home base between hiking the awesome woods in the awesome weather. Happy Spring!!
We visited two parks in the southwest corner of NC. First was Chimney Rock park which we got into for a reduced admission rate because the actual Chimney Rock part was closed for upgrades to the stairs and elevator. We were still able to hike the most popular waterfall trail, Hickory Nut Falls. It was about .75 miles each way and pretty steep! But worth it for the breathtaking falls at the end.

Circuit training is a very effective way to workout using a variety of exercises back to back. The such limited time allowed for rest is what makes it so challenging. As your fitness improves, you'll find that you require less and less rest in between sets.

MoJo's Kitchen Ep.3
Tasty Meatloaf
Besides the fact that this recipe uses grass-fed beef, what makes it so good are the fresh ingredients such as garlic, basil, and of course our secret addition - cherries. When you combine all these, it makes a very tasty meatloaf that's rich in both nutrients and flavor.
The video is a bit long, but it's thorough. We'll get better at making them as we move along.

Kitchen Improvement
We really, really want to be do-it-yourself people. We always have really high motivation and really good intentions! We are usually pretty confident that we can tackle whatever the job might be! Then, sometimes, we get started... and we break stuff... and it's hard... and it takes a million times longer than we expected. And usually somewhere in there, we ask ourselves, "Why didn't we just hire someone to do this thing???" But then, when we finish, and we look at what we have completed together, it feels so satisfying.
